While I would hesitate to call it 'easy', this is what I use(jahshaka.org). Jahshaka is free and open source. There are some tutorials on the site which help to do basic tasks -- like editing -- and if you stick to that you should be fine. There are about 3 germane keyboard shortcuts in the tutorial that I linked. You ought to learn those rather than try to find menus for things...
Video Editing is something I've only briefly touched on. I was looking at using the full fledged Nuendo to work with doing audio sync'd to video, but never did get much further than setup (which was extraordinarily painful).

Essentially I'm borrowing a DVD Camcorder and making a training video for work, but want to edit it and add visual and sound effects afterwords (got any music you want featured?).
As it's my first foray into this type of adventure I'm trying to make it as easy as I can.
